Beet and Walnut Salad
- 6 to 8 assorted beets, cooked and peeled
- 2 tart apples, cored
- 1⁄2 cup feta or goat cheese
- 1⁄2 cup walnuts
- 1⁄3 cup thinly sliced scallions
- 1⁄4 cup flat-leafed parsley
- 1⁄3 cup basic vinaigrette dressing
Directions
Slice beets and cut apples into wedges and mix together in a bowl with cheese, walnuts, scallions and parsley. Drizzle with vinaigrette and stir to coat. Serve on a bed of butterhead lettuce.
