Beet and Walnut Salad
  • 6 to 8 assorted beets, cooked and peeled
  • 2 tart apples, cored
  • 1⁄2 cup feta or goat cheese
  • 1⁄2 cup walnuts
  • 1⁄3 cup thinly sliced scallions
  • 1⁄4 cup flat-leafed parsley
  • 1⁄3 cup basic vinaigrette dressing

Directions

Slice beets and cut apples into wedges and mix together in a bowl with cheese, walnuts, scallions and parsley. Drizzle with vinaigrette and stir to coat. Serve on a bed of butterhead lettuce.
