Green salad for a burst of energy!

Sometimes you just feel like treating your body to food that is healthy, vitamin-rich and cleansing. Lettuce, a few chunks of avocado, some sprouts and nuts, and there you have it: a plate of nourishing, vitamin-rich food. Your body will thank you!

Serves 2 | 10-15 min

Green salad:

  • 2 small heads of crisp lettuce
  • 4 leaves of kale
  • 2 avocados
  • 5 leaves of radicchio
  • A handful of cashew nuts
  • Sprouts, shoots or herbs to garnish

 

Lemon vinaigrette:

  • 25 ml cold-pressed rapeseed oil
  • 12.5 ml lemon juice
  • A sprinkling of salt
  • A sprinkling of cane sugar
  • A twist of black pepper

1. Rinse the leaves and dry them in a salad spinner. Slice the avocados and rinse the sprouts or shoots that you will use as a garnish.

2. Prepare the salad dressing by measuring the ingredients in a Fiskars salad dressing mixer and mixing them together. Put the lettuce leaves on two plates, place the avocado slices on top and garnish the salad with a handful of shoots, sprouts or herbs and the cashews.

3. Drizzle the dressing over the salad and enjoy!

Tips:

Add a little extra to make your green salad more filling:

- Add some tasty cheese, such as low-fat feta or cottage cheese.

- Toast some wholegrain croutons in a pan with olive oil and garlic.

- Fry a piece of salmon or whitefish to go with the salad.

- Sprinkle some goji berries or other dried superberries over the salad.

- Poach an egg or add chunks of boiled egg.

- Sprinkle some brined or crisp, oven-roasted chickpeas over the salad.

- Enjoy the salad with some rye crisps or nachos.
