Red cabbage salad

This salad does not only taste delicious, it will also bring a pop of colour to the table.

Serves four

For the salad:

  • 1/2 Medium red cabbage
  • 1 Small red onion
  • 1 Large carrot
  • 1 Apple
  • 1 Stem of kale
  • 1 Handful of cashews


For the dressing:

  • 2–3 dl Natural Greek yogurt
  • 2 tsp Dijon mustard
  • 1 Garlic clove, minced
  • 2 tsp Honey
  • Salt and black pepper
  • Juice & grated zest from 1/2 lemon

1. Remove the outer leaves of the cabbage and cut out the core. Slice the cabbage, and onion very thinly. Peel and julienne the carrot and apple.

2. Wash the kale and then remove the stem. Chop the kale finely. Place all the salad ingredients in a large bowl.

3. In a small bowl, mix together the dressing ingredients. Add salt and freshly grind black pepper to taste. Then pour the dressing over the salad and mix well. Let the cabbage salad stand for a while before serving.
